- 1 tsp cumin seeds

Instructions:
Step 1: Prepare the Vegetables
Wash and chop the mixed vegetables into small pieces. You can use a variety of vegetables like carrots, potatoes, green peas, cauliflower, etc. Keep them aside.
Step 2: Prepare the Masala
Heat oil in a pan and add cumin seeds. Once they start to crackle, add chopped onions, garlic, ginger and green chillies. Saute until the onions turn translucent.
Step 3: Add the Vegetables
Add the chopped vegetables to the pan and mix well. Add coriander powder, turmeric powder, red chilli powder and salt. Mix well and cook for 3-4 minutes.
Step 4: Add Water and Cook
Add 1-2 cups of water to the pan and mix well. Cover the pan and let the vegetables cook on medium heat until they become soft and tender.
Step 5: Add Garam Masala Powder
Once the vegetables are cooked, add garam masala powder and mix well. Let it cook for 1-2 minutes.
Step 6: Garnish with Sev
Transfer the sev bhaji to a serving bowl and garnish with sev. Serve hot with roti, naan or rice.
